Preparation
- Form 69g balls of ground beef
- Cut optional toppings
- Make burger sauce
- katchup, mustard, japanese mayo, pickle juice, diced pickles to taste
Cooking
- Preheat the griddle to medium-high heat
- Clean with water and prep with avocado oil
- Lay down a small tablespoon of beef tallow
- Place patties into beef pools and salt liberally
- Smash patties flat
- Roll buns with butter and press into griddle
- Flip patties when dark brown crust forms
- Cheese on flip
- Place crown on cheese
- Place heel, face up, on crown
- Top and serve
