  • 1 1/2 double cheese burgers per person (including kids)

Preparation

  • Form 69g balls of ground beef
  • Cut optional toppings
  • Make burger sauce
    • katchup, mustard, japanese mayo, pickle juice, diced pickles to taste

Cooking

  • Preheat the griddle to medium-high heat
  • Clean with water and prep with avocado oil
  • Lay down a small tablespoon of beef tallow
  • Place patties into beef pools and salt liberally
  • Smash patties flat
  • Roll buns with butter and press into griddle
  • Flip patties when dark brown crust forms
  • Cheese on flip
  • Place crown on cheese
  • Place heel, face up, on crown
  • Top and serve
